"A healthy vegan dish made with Trader Joe’s soy chorizo, these lettuce wraps will satisfy your Mexican craving with fresh flavors and an avocado lime sauce! This soy chorizo recipe comes together in a snap, thanks to a short (but spicy!) ingredient list. Trader Joe’s Soy Chorizo: duh. This beauty is the star of the soy! TJ’s soy chorizo is a soy-based vegan protein that is PACKED with spices and peppers which give this dish a kick. Sweet Potato: The sweet-p in these lettuce wraps are the perfect starchy addition. They are hearty and add some great flavor. Black Beans: One of my favorite Mexican side dishes! No, black beans are not paleo, but you could easily remove them and add in some more taters. Avocado Lime Sauce: Honestly you need the sauce to really make this dish work. The avocado lime sauce adds both a little fat and acid to the recipe to round everything out. Cilantro: Forever and always. I love you. In addition to a simple ingredient list, making these soy chorizo lettuce wraps couldn’t be easier! First make cook your sweet potatoes in a skillet. I adore my 12 inch cast iron for this, but you could totally use your favorite pan. Then you remove the potatoes, add the chorizo, and cook for about 10 minutes. While the chorizo is cooking, you make the creamy avocado-lime sauce. Add all ingredients to a food processor and process until smooth. If the consistency is too thick, add a little more olive oil or lime juice. Then you add the sweet potatoes and black beans back into the skillet and cook until heated through. Serve in bibb lettuce and top with the avocado lime sauce and extra cilantro!"
