There's no need to use traditional pasta if you make this Zucchini Pasta with Pesto and Mushrooms. This vegan pasta recipe literally uses thinly sliced zucchini to replace pasta noodles. As long as you have some zucchini handy, you can just slice and go! This dish cooks up quickly, slicing the zucchini is the hardest part, and is a great meal to add to your weekday menu. The mushrooms complement the flavorful zucchini, and pesto ties the whole dish together. You'll be surprised by the tender texture of the zucchini. After trying this dish, you'll never go back to regular pasta. Try serving this meal with a side of quinoa or rice to bump up the fiber content of this healthy dish.
