Shortcut Pumpkin Pie

When Thanksgiving rolls around, you'll be baking and cooking like crazy. This Shortcut Pumpkin Pie will relieve some of the stress because it's much simpler than making a pumpkin pie from scratch. This recipe calls for a store-bought, gluten-free crust, so you don't have to make a homemade pie crust. You'll love that this recipe is completed in much less time than other pumpkin pie recipes. Although this is a shortcut recipe, it tastes like a five-star pumpkin pie. Your guests won't have a clue that you didn't make this gluten free recipe from scratch.


If you are working with a pie crust that isn't already preformed and you notice that it keeps cracking, try mixing a 1/2 teaspoon of water into the dough.

Makes1 Pie

Cooking MethodOven


  • 1 (9-inch) gluten free pie crust
  • 2 large eggs
  • 1 3/4 cup fresh pumpkin puree
  • 3/4 cup sugar
  • 1 1/2 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 (12-ounce) can of evaporated milk


  1. Preheat oven to 425 degrees Fahrenheit.

  2. In a large bowl, beat eggs. Then, mix in the fresh pumpkin puree, sugar, pumpkin pie spice, and vanilla.

  3. Slowly stir the evaporated milk into the pumpkin mixture.

  4. Spread the gluten free pie crust in a pie pan.

  5. In order to avoid overflowing or spilling, put the pie pan on a baking sheet.

  6. Then, pour the pumpkin filling into the pie shell.

  7. Cover the pie with tin foil .

  8. Put the baking sheet in the oven and bake at 425 degrees Fahrenheit for 15 minutes.

  9. After 15 minutes, reduce the oven's temperature to 350 degrees Fahrenheit and continue baking for another 45-50 minutes. The pie will be done when a tooth pick (inserted into the center) comes out clean.

  10. Allow pie to cool completely before serving.

  11. Serve this pumpkin pie with whipped cream or vanilla ice cream.
