Warm up with a bowl of this Old-Timey Potato Soup. This potato soup recipe is the perfect comfort food for a chilly fall day or a blustery winter evening. Chock full of healthy veggies and hearty potatoes, this gluten free soup will be sure to leave you feeling full and satisfied. When you serve this soup to your friends and family, everyone will be slurping it up as fast as they can. Because this soup was made in our test kitchen, you can be sure that it's a tried-and-true recipe.

Ingredients

  • 4 cups potatoes, peeled and sliced
  • 1 medium onion, quartered and sliced
  • 1 teaspoon celery salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 2 cups water
  • 2 cups half-and-half or milk, warmed
  • 1/4 cup chopped parsley
  • 1 cup cheddar cheese, shredded (optional)

Instructions

To Make the Potato Soup

  1. Place potatoes in a large saucepan and add onion, spices, and water. Bring to a boil, then cover and simmer for 30 minutes or until potatoes are tender. Mash slightly with a potato masher; you want some chunks, but the partial mashing will thicken the soup.
     

  2. Turn heat to low, add the half-and-half and parsley, cover saucepan, and simmer for 10 minutes. Taste and adjust seasoning as desired. If you wish to thicken the soup further, add 2 to 3 tablespoons of gluten free instant mashed potatoes and continue to cook for 10 more minutes.  
     

  3. Serve with the shredded cheese, allowing diners to add as much cheese as desired.
     

Notes

If you choose milk instead of half-and-half, keep the heat down very low so that the milk does not curdle as it heats.
