Are you a new to the gluten free world? If so, finding easy-to-make gluten free recipes can be a daunting task. Luckily, you can now try this Easy Peasy Chicken Noodle Soup recipe because it's 100 percent gluten free, super simple to make, and incredibly delicious to eat. The combination of flavors is out-of-this world good, but you'd never guess that this recipe requires only ten common everyday ingredients. Most of these ingredients you'll already have on hand in your kitchen, so you won't even need to make a run to the grocery store. There's really  no reason why you shouldn't try to make this homemade gluten free soup. There's no downside to this easy soup recipe!

Serves4

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 2 cloves garlic, finely minced
  • 3 cups chicken broth
  • 1 cooked chicken breast, diced into 1/2-inch cubes
  • 2 ounces (about 1/2 cup) gluten free noodles
  • salt and fresh ground pepper
  • 1 tablespoon finely chopped fresh parsely

Instructions

To Make the Soup

  1. In a four-quart saucepan, heat the oil over medium heat. Add carrot, celery, onion and garlic and stir, then cover, lower heat and let the vegetables “sweat” (see note) for 5 minutes.  
     

  2. Uncover, add the broth and allow to simmer for 10 minutes. Add the chicken and continue to simmer another 5 minutes, then add noodles and cook until tender, about 5 more minutes.  Taste and add salt and pepper as desired, add the parsley and serve.
     

Notes

The technique of allowing vegetables to cook in their own juices, called “sweating”, draws more natural flavor from the vegetables into the broth and is often used in quick-cooking recipes such as this.
