Pepperoni Pizza Mini Muffins

Who doesn't love a fun, bite-sized treat that you can just pop in your mouth? Well these Pepperoni Pizza Mini Muffins are guaranteed to hit the spot! This incredibly easy recipe makes the perfect treat for any time of the day. Serve them as an appetizer at a party, as an after school snack, or just eat an entire batch for lunch. And don't forget to put out some pizza sauce on the side for dipping. Your friends and family will absolutely love this recipe. Make sure to bring two batches to your next party - these mini pizza muffins will go fast! Pepperoni Pizza Mini Muffins are also a wonderful kid-friendly recipe. Not only will kids love eating these bite-sized balls of goodness, they'll love to help you make them as well! The preparation is very simple - just combine all of your necessary ingredients, and then form the dough into small, round balls. Cook time takes about twenty minutes. When your muffins are ready, the outside should be firm and light brown in color, while the inside will be slightly gooey and darker in color. This test kitchen original recipe was made with condensed tomato soup substitute, instead of gluten free tomato soup. In most cases, it might be easier to make this recipe with the substitute, as you most likely have all of the necessary ingredients already in your pantry.

Ingredients
- 1 can gluten free condensed tomato soup (or your own homemade substitute)
- 1/2 cup Colby Jack cheese, shredded
- 1/2 cup Cheddar cheese, shredded
- 1/2 cup chopped turkey pepperoni
- 3/4 cup water
- 1 teaspoon dried Italian seasoning
- 2 1/2 cups all-purpose gluten free baking mix
- Optional: pizza sauce for dipping
- For the tomato soup substitute:
- 8 ounces tomato sauce
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
Instructions

For the Mini Muffins:

Preheat the oven to 350 degrees F.

Combine condensed tomato soup (or your homemade substitute), cheese, pepperoni, water, and seasoning in a large mixing bowl. Mix well. Then add the baking mix, and stir until combined (batter will be lumpy).

Coat the mini muffin tin with cooking spray. Using your hands, form the batter into small balls, about the size of a golf ball. Divide the batter evenly between the 36 mini muffin cups.

Bake the muffins for 20 minutes, or until the muffins are light brown in color.

Let the muffins cool for a few minutes before removing them from the pan.

Serve with pizza sauce for dipping, if desired.

For the homemade condensed tomato soup substitute:

Combine the tomato sauce, sugar, cornstarch, and salt in a mixing bowl.

Mix well until all ingredients are combined.

I enjoyed these bites so much that I kept going back for more. I liked their crispy outsides and chewy insides. Dipping them in sauce really made their flavors really pop.

This was unlike anything I've ever eaten. This would be a great appetizer for a party. I only ate a few bites but I felt satisfied and full.
