"These gluten free cashew meal blueberry muffins make a delicious healthy breakfast or snack. I love to use nut meals when I do my gluten free baking. It adds protein, and helps balance out the sugar. (And a bonus, my kids can't tell these are healthy!) These are quick and easy to make and are great as an after school healthy snack. Use fresh or frozen blueberries, or any fruit in season because both taste delicious in this recipe."
