Princess Slaw

Princess Slaw is a light yet tangy version of coleslaw that is not only gluten-free but also dairy-free. This tasty side dish recipe gets its name from the pink and purple vegetables that are used to make it. All of the vegetables are perfectly crisp and have such a fresh taste. The best part about this slaw recipe is the dressing. It's light and tangy, thanks to a bit of lemon juice and mustard. Once you've tossed the slaw with the dressing, simply chill the dish for a bit and then dig in!
