This looks so yummy. It is definitely a meal in one and perfect for lunch. I love avocados but when I eat one I am always left wanting more and feeling somehow unsatisfied so stuffing it with a few extras is a great idea. I have had shrimp salad in an avocado before but that is expensive and an unreasonable expectation for an everyday lunch so I am loving this suggestion and combination of flavors. I can't wait to try it.
