You'll love pulling this colorful salad in a jar out of your lunch box. This recipe for Colorful Berry Salad with Ginger-Dijon Vinaigrette includes instructions to create it in a Mason jar. Fresh ginger and a hint of Tabasco sauce give this portable salad a kick that you'll love. This is a healthy lunch recipe that you'll find yourself using all the time because it makes your life so easy.

  1. The dressing should always go first.

  2. Then start with the heaviest ingredients that won't absorb the dressing such as hard vegetables (carrots, cucumbers, red and green peppers, cooked beets, fennel).

  3. Next will come another sturdy layer of nuts, beans, grains, or pasta. If you want to add cheese or cooked meat, then add them after the sturdy layer.

  4. Add in the soft veggies and fruit such as avocados, tomatoes, diced strawberries, or blueblerries. 

  5. Last but not least, pack in your greens! Because the lettuce or spinach will be at the top, it won't get soggy from the dressing. Just be sure that your Mason jar doesn't tip over in your lunch box!

I ate a salad in a jar at a restaurant the other day. I felt like a kid with a lucky packet. It was such fun. It is also a good idea to take your salad to work in. This Berry salad looks extra good and the Ginger Dijon Vinaigrette sounds awesome. I love ginger and I'm sure this vinaigrette has a nice tang to it. Can't wait to try it.
