Cooking with dried fruit is something I love. We have plenty of it in South Africa and it is not expensive to use. I especially love apricots in cooking. I was happy to see that this recipe is also made with rice as I love rice. I am definitely going to keep this recipe. It is quick to prepare too and perfect for a mid week meal.
