Delicious AND gluten free? I know what I'm making for dinner tonight

This is a me meal. Sadly, my husband and daughter do not like pepperoni. I love the stuff. It's the pizza topping I grew up with so it is one of my favorites. I have tried cauliflower puree once and it didn't turn out great. But, this is a new way so I will be trying it.

This looks like a super easy dinner to make that kids would absolutely love!

I love cauliflower pizza but I hate how it makes my house smell after I bake it. Anyone know how to avoid this?

Hello! Here is what the blogger has on her site concerning the cauliflower puree. "Clean and trim the cauliflower, breaking it into medium sized pieces. Place in a microwave safe bowl with 2 Tbl of cream and 1 Tbl of butter. Microwave, uncovered, on high for 10 minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for another six minutes on high (or until tender.) Remove from the microwave and put into a high speed blender or food processor along with the 8 slices of pepperoni and 1/4 cup mozzarella cheese. Puree until smooth. Season with salt and pepper to taste. You can adjust the cream and butter to your preference for consistency." Let me know if you have any other questions!

This looks like a great recipe. I really like the idea of throwing in other vegetables.

This was excellent. I added zucchini and green bell pepper to give it a little more nutritional value. I think I will use a bigger cauliflower next time, though, since the one I used was on the small side.

I'm wondering if this casserole would taste too mushy since the cauliflower is pureed? I would maybe try grating the head of cauliflower instead, so it would have the texture of shredded potatoes.
