I agree that the combination of eggplant, tomato and cheese is a tried and true winner. I really do like it. I eat eggplant parmigiana all the time. This is a much easier and less dense version of those combinations but with feta. Feta and tomatoes are a marriage made in heaven if you ask me so I think I'm really going to like this. I like to take cherry tomatoes and scoop out the flesh, then stuff the skin with feta cheese, sprinkle a little olive oil over the top bake in the oven. Really, really delicious.
