Like many other gluten free baked goods and breads, this gluten free recipe lists xanthan gum as one of its required ingredients. Derived from corn, xanthan gum is safe for people with celiac disease, a gluten intolerance, or a gluten allergy. 

Essential for a gluten free cook to keep in their kitchen, this ingredient acts as a binder, thickener, and a stabilizer for your recipe. The binding occurs when xanthan gum is combined with water or another liquid. In wheat flours, gluten typically binds together your recipe, so xanthan gum is a great gluten free alternative. 

However, some gluten free flour will already include xanthan gum in its list of ingredients. In that case, you will not need to include extra xanthan gum in your recipe. Before beginning to bake, be sure to check the ingredients on your flour blend.

Note: If you notice that your gluten free baked goods have a gummy or sticky texture, then you've probably used too much xanthan gum. A typical recipe will call for 1 tablespoon or less of xanthan gum.
