If you're looking for a sweet and easy gluten free breakfast, then check out these French Toast Muffins. They have all the flavor of classic French toast but in muffin form. To add some extra protein and crunch, try mixing in a handful of chopped nuts. This recipe utilizes those pesky bread ends that usually get wasted. These gluten free French Toast Muffins can also be frozen and then thawed when you're ready to eat. They can be eaten as-is, but they are even better when they are warm and topped with maple syrup--just like real French toast!

My husband loves french toast. I could take it or leave it. I do think these would be good sprinkled with powdered sugar. That is usually how I eat my french toast. My husband likes syrup on his. The powdered sugar would make it easier to take it on the go.
