Arrowhead Mills Gluten Free All Purpose Baking Mix

Ingredients: organic rice flour, whole grain sorghum flour, organic tapioca starch flour, organic whole grain sorghum flour, leavening (sodium acid pyrophosphate, baking powder, monocalcium phosphate), inulin, rice bran extract, xanthan gum.

Pros: You won't need a calculator because this flour allows for an exact substitition with gluten-filled flour. Plus, there's no aftertaste with this all purpose flour.

Cons: There have been some reports that the mix has been cross-contaminated, and that the company does not use a gluten-free line during production. However, the company website states that they "run rigorous tests to be sure that nothing [called] gluten free contains any gluten, and [they] carefully monitor [their] production facilities to be sure that there is no possibility of cross contamination" (arrowheadmills.com).

Ingredients: Sweet Brown Rice Flour, Tapioca Flour, Arrowroot Flour, Sorghum Flour, xanthan gum

Pros: This flour blend makes amazing gluten free breads.  Reviewers say that Namaste works for almost anything; it's great for cookies, muffins, cakes, pancakes, breads, and more.  

Cons: Sometimes the food may come out gummy.

Cup4Cup Gluten Free Flour

Ingredients: cornstarch, white rice flour, brown rice flour, milk powder, tapioca flour, potato starch, xanthan gum

Pros: This all purpose flour makes good cakes and other desserts, but it makes amazing pastries. You won't find another gluten free flour that works so well with pastries.  This gluten free flour makes a 1 for 1 cup substitution for normal flour (hence their name).  

Cons: While the breads brown amazingly, it can become yesty.  You should also note that this flour contains milk.
