No Bake Cookie Dough Balls

Notes
For a healthier option, make your cookie dough balls from:
- 1 1/4 cup of gluten free all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup of honey
- 1/4 cup of coconut oil
- 1 1/2 teaspoon vanilla extract

Ingredients
- 1/3 cup butter, softened
- 1/3 cup brown sugar
- 1 tablespoon vanilla extract
- 1 cup gluten free all-purpose flour (we used Bob's Red Mill)
- 1 1/2 cup semi-sweet chocolate chips
Instructions

Line a baking sheet or large plate with waxed paper and set aside.

In a mixing bowl, beat the butter, brown sugar, and vanilla together until combined. Slowly beat in the flour until well-combined. Pour in 1/2 cup of chocolate chips and mix into the dough.

Shape the dough into round balls, approximately 1 inch in diameter. Place the cookie dough balls on the baking sheet or plate. Let chill in the freezer for at least 30 minutes.

While the cookie dough balls are chilling, melt 1 cup of chocolate chips. You can melt the chocolate on the stove top on medium-high heat, or in the microwave at 50% power for 30 second intervals.

Cover the cookie dough balls in chocolate, and then place back in the freezer for at least ten minutes. Enjoy!

I love cookie dough, and cookie dough dipped in chocolate sounds decadent. The fact that they're GF makes it 1000x better.

I used the whole cup of flower (I also used a brown rice flour) and the mixture was SUPER powdery. I just added ungafare of milk and it was perfect. (That's German for "a little bit of this, a little bit of that.")

Just what I was looking for! I made them with pea protein powder instead of flour for a low carb treat. Didn't use a full cup of powder, more like 2/3 cup. Also added some walnuts. Yum!

These balls are really rich, so I would definitely make them smaller. I didn't have to eat a lot to satisfy my chocolate craving.

I absolutely loved the honey version of this treat! The peanut butter option was just as tasty. I would probably make these in more bite-sized balls since they are so sweet and delicious (and so I can share them with more people!).

What a decadent treat! If you love your sweets like I do, you'll be in heaven with these cookie dough balls. I bet they'd taste great if you pop them in the freezer for a bit before eating them too. Yum!

I really enjoyed the alternate/coconut oil balls. They're definitely sweet and rich though, so I'd make them much smaller next time.

These are so good and I can't believe they're no-bake! The small ingredient list is appealing to me, too. These are really rich, but you'll want to gobble these all up, especially if you're a cookie dough lover like I am. Next time, I would make the balls a little smaller so that there are more of them. I'm keeping this recipe on hand for when I need a quick dessert recipe for a party. Love it!
