Copycat Rocky Road Bars

These Copycat Rocky Road Bars are oh-my-goodness good. Made with chocolate, marshmallows, and coconut, these dessert bars are delightfully rich, perfectly gooey, and simply sweet. Plus, there's a bit of a crunch with the addition of ginger snap cookies and chopped pecans. Before making this recipe, we suggest you read through the ingredients and instructions. We found it useful to organize the ingredients in the beginning because many ingredients are used in different steps. Although this dessert bar recipe requires a bit of work, the end result is well worth the effort.

Makes20 Bars

Ingredients

  • BOTTOM LAYER
  • 18 Mi-Del or other brand gluten free ginger snaps
  • 1 cup gluten free rice chex
  • 4 tablespoons melted butter
  • 3 tablespoons sweetened condensed milk
  • 2 tablespoons sugar
  • 1 egg white, yolk reserved for brownie layer
  •  
  • BROWNIE LAYER
  • 1/2 cup white rice flour
  • 3 tablespoons tapioca flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  •  
  • 1 1/4 cup semi-sweet chocolate chips, divided
  • 4 tablespoons melted butter
  •  
  • 3/4 cup sugar
  • 3 tablespoons vegetable oil
  • 1 whole egg
  • 1 egg yolk
  • 1/2 cup sweetened condensed milk
  • 2/3 cup buttermilk
  • 1 cup coarsely chopped pecans
  •  
  • TOPPING
  • 1/2 cup white or semi-sweet chocolate chips
  • 1/2 cup coconut flakes
  • 1 cup mini marshmallows

Instructions

To Make the Bottom Layer

  1. Preheat oven to 350 degrees F.  Spray a 7 x 11 baking pan with cooking spray.

  2. Place cookies and rice chex into a food processor and pulse until cookies are all broken into fine crumbs. Add the sugar and melted butter and pulse a few times. Add the condensed milk and egg white and pulse until mixed. 

  3. Press mixture evenly into the bottom of the prepared pan, using a flat bottom glass or measuring cup to make the layer even. 

  4. Bake for 8 to 10 minutes. The layer should just begin to look dry on top. Cool on a cooling rack.

To Make the Brownie Layer

  1. Combine the sugar, flours, xanthan gum, and salt in a medium bowl, tossing to mix.  

  2. Melt 3/4 cup of the chocolate chips in the microwave in 30-second increments until soft enough to stir into a smooth mixture.

  3. In an electric mixer, combine sugar, oil, egg, and egg yolk. Mix well.  Add the condensed milk and stir to blend. With the machine running, add the dry ingredients alternately with the buttermilk.  

  4. Stir in the melted chocolate, the remaining chocolate chips, and the nuts by hand. 

  5. Spoon over the baked bottom layer and bake 15 minutes. Add the white chocolate chips on top and bake for another 10 minutes.

  6. Top the brownie with coconut and bake another 12 minutes.  Finally, top with the marshmallows and bake until the marshmallows begin to brown, another 10 to 12 minutes. 

  7. Cool completely for several hours before cutting into bars.  

Note

The center will NOT test clean when a toothpick is inserted, but the edges should look baked and the center fairly firm. The brownie will firm up once it cools.

So freaking delicious. It's not dry and it has a ton of great flavors all mixed together. I love that it's rich - a little goes a long way which means a whole batch of these can serve many people!

I would have never guessed this was gluten-free! It's unbelievably good; I'd love to have it at a bonfire.

OMG I really loved these. So delicious and moist. The only thing I would change to use all semi-sweet chocolate chips instead of the white chocolate chips.

These were really rich and chocolatey. My favorite part was the intersection of the chocolate and marshmallows. If anything, i would probably add more marshmallows in somehow.
