These Gluten Free Chex Scotcheroos are a simple, fun gluten free dessert. You don't need to be a master baker to make these gluten free Chex mix bars. Because this gluten free dessert requires only a few simple steps, this easy recipe is perfect when you're pinched for time or working with a young assistant. A chocolate layer covers these bars, giving them a decadent touch. Between the crunchy texture and the sweet flavors, these Chex Scotcheroos will easily become a family-favorite treat. After all, it's an easy no-bake dessert recipe. What's not to love?

Ingredients

  • 3 cups rice or corn Chex
  • 1/2 cup light corn syrup
  • 1/2 cup sugar
  • 3/4 cup peanut butter, divided
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips, see note
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line an 8 x 8 inch baking pan with foil, leaving an overhang on two sides for easy removal.

  2. Place cereal into a large bowl. In a small saucepan over medium-high heat, combine syrup and sugar and stir until it begins to boil. Remove from the heat and stir in 1/2 cup of the peanut butter until smooth, then immediately pour over the cereal. Toss until all of the cereal is coated with the peanut butter mixture. Pour into the prepared pan and smooth into a level layer.

  3. In a microwave safe bowl, place the chocolate chips, butterscotch chips, and the remaining peanut butter. Microwave in 30-second intervals two or three times until mixture can be stirred smooth. Stir in the vanilla and pour over the bars, smoothing with a spatula into an even layer. Cool completely at room temperature.

  4. Use the foil overhangs to lift the bars from the pan. Cut into small squares and serve. You can also store these bars at cool room temperature.

Note

Check the butterscotch chips to be sure the brand is completely gluten free and does not include any gluten products such as barley.

These are pretty sweet so a little goes a long way. It is nice to see a gluten free version of scotcheroos. I like the note at the bottom with the tip to cut the butterscotch chips for gluten. People new to gluten free don't always know what to look out for.

Giving this Chex Scotcheroos a four-star rating as the word "gluten-free" is not indicated in its ingredients. Now in a note below the recipe, it tells us to check the butterscotch chips to make sure it's gluten-free. This is very easy to make though. The ingredients are simple and easy to find. So those sweet tooth who love peanut or peanut butter-flavored desserts, this recipe is for you. Go ahead. Indulge. Thanks for this recipe.

The hardest part of eating gluten free, in my opinion, is all the desserts you miss out on. But these look amazing. Can' wait to try them.

I like Chex Mix, but not the actual Chex cereal. I should make this will all of the leftovers!

I'll just have to substitute almond butter for peanut butter and probably break down the Chex a bit more, but I'll definitely try these.

These are great! I'm a huge fan of traditional scotcheroos, and this recipe is VERY similar in flavor and texture. The Chex cereal is a little crunchier than the traditional crisp rice cereal, but it was a really nice texture.

I never grew up eating scotcheroos, but this recipe has converted me. I love all of the different textures and flavors in these. I also like that I can make these for a potluck or party and not worry about people not being able to eat them because they're gluten-free!

Scotcheroos are my favorite! I love the combination of peanut butter, chocolate, and butterscotch.
