Ingredients

  • 1/2 cup sorghum flour
  • 1 cup white rice flour
  • 3/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2/3 cup coconut oil
  • 1/2 cup coconut/palm sugar
  • 3 tablespoons almond milk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • 20 drops NuNaturals Alcohol Free Liquid Steviaâ„¢
  • TOPPING: (OPTIONAL)
  • 2 ounces 100 percent Ghirardelliâ„¢ baking chocolate
  • 20 drops NuNaturals Alcohol Free Liquid Steviaâ„¢

Instructions

  1. Preheat oven to 350 degrees F.

  2. Start by sifting the flours, cocoa, baking soda, and salt, in a medium mixing bowl. Set aside.

  3. Using a microwave bowl, soften the coconut oil until it liquefies. Add in the coconut/palm sugar and mix until it's dissolved being sure there aren't any noticeable chunks.

  4. Add the vanilla and mint extract as well as the Liquid Steviaâ„¢.

  5. Mix the flour into the coconut oil with a fork. Then roll the dough into 1/2-inch balls and press softly onto a cookie sheet. (You won’t need to spray or use parchment paper because the oil from the dough should suffice). These cookies do not spread, therefore what you see is what you get.

  6. Bake at 350 degrees F for approx 10 minutes. After cooked, remove and let cool a few minutes before adding the optional topping.

  7. To make topping, melt the chocolate in microwave, add Liquid Steviaâ„¢ and mix well. Spoon on top of the baked cookies after they have cooled.
