The holidays are closer than you think and with them comes cookie exchanges and holiday parties. Make these Gluten Free Gingerbread Cookies and share them with your friends and family. They're going to love them so much they won't know that they're gluten free cookies. With a box of Simple Mills pumpkin muffin mix, this cookie recipe is really easy to make and they're going to turn out deliciously. If you love making Christmas cookies then these gluten free gingerbread cookies are the perfect thing for you. Once they're out of the oven and cooled, have fun decorating them however you want.

  • 1 box Simple Mills Pumpkin Muffin Mix
  • 3/4 teaspoon Ground ginger
  • 3/4 teaspoon Ground cloves
  • 1 large Egg
  • 4 tablespoons Oil (melted coconut oil preferred)
  • 3 tablespoons Pure molasses
  • Decorating Ingredients: dried cranberries, softened raw coconut butter, raisins or cherries

Gluten Free Gingerbread Cookies

  1. Preheat oven to 275F and line two baking sheets with parchment paper or a silicone mat.

  2. In a large bowl, whisk together muffin mix, ginger, and cloves.

  3. Mix in egg, oil, and molasses and stir until dough forms.

  4. Shape dough with hands into a ball, turn out onto parchment paper and roll out to about 1/4 inch thick. Use cookie cutters to cut into shapes and gently loosen and lift with a spatula onto the baking sheets.

  5. Bake 30 minutes or until golden brown and firm. Remove and cool.

  6. Decorate with softened coconut butter for a low-carb, Paleo-friendly treat.
