I've only baked a couple of gluten free cakes using a premade cake mix so I am not too familiar with some of the ingredients it takes to make this cake. Thank you for the suggestion of the information on binding agents. I too use to like making the pizza pan cookies for my son's birthdays and was just thinking about pulling out my pizza pan and experimenting.

How about this cake?? I'm a coffee addict as it is. I want to try it. I just have to source this xanthan gum as I've never heard of it here in South Africa. I'm sure if I went into a baking shop they will point me in the right direction. I will do that tomorrow and hopefully find some. Then I'm going to get started baking...

Hi FoodLover! Xanthan gum is a binding agent that acts like the gluten in regular baked goods. Not all gluten free baked goods require xanthan gum. We have an article on binding agents for further help:
