What is a Layered Custard Cake?

A layered custard cake, also known as a magic cake, is a cake that separates into three distinct layers while it's baking. Although it may seem difficult to make, it's as simple as can be to make this gluten free cake. After baking this cake, you'll end up with a dense, moist cake base, a light creamy middle, and a spongy top."

Tips and Tricks to Make this Custard Cake: 

1. Your baking dish needs to be the appropriate size for your amount of ingredients. Too small and you won't be able to fit all of your egg whites. Too large and your layers will be too thin. 

2. Be careful when you beat your egg whites. Nicole from Gluten Free on a Shoestring gives some great tips for this step.

3. Make sure you don't overbake or underbake your cake because this may ruin your layers. Your cake should be slightly wobbly when it comes out of the oven, and the top should be golden brown.  

4. Wait until your cake is set (at least two hours) before turning it out of the pan. To make this step as smooth as possible, you can line your pan with parchment paper. 

5. Make this cake ahead of time. The flavors will come together while your cake is in the fridge, so don't wait until the last minute to make this cake.
