This recipe for Flourless Lemon Cake uses almond meal to make this delicious gluten free recipe. Do you know the difference between almond meal and almond flour? Don't worry if you're stumped, you're not alone. Read on to discover the differences between almond meal and almond flour. 
Both almond meal and almond flour consist of ground almonds, but almond meal is courser than the finely ground almond flour. Another difference is that almond meal will generally ground almonds with their skins on. So you may see flecks of the dark skin in your almond meal. In contrast, almond flour is made using blanched almonds (no skin). 
In some recipes you can use almond meal and almond flour interchangeably. However their textures will be different, so you should use almond flour when you're looking for a lighter texture. For example, you can probably use either almond meal or almond flour for chocolate chip cookies, brownies, or a quick bread, but if you're making a white fluffy cake or a delicate dessert, then you should use almond flour.
