These mini quiches pack so many delicious flavors into one bite-sized morsel. Best of all, the recipe is very easy to follow and ready in only twenty minutes. These mini quiches are made from gluten free Bisquick, and can be tailor-made to fit your family's breakfast preferences. Love your vegetables? Then load up these quiches with lots of peppers and onions. Want to add in some meat? Throw in some bacon bits or leftover ham to add some protein to your morning meal. These fun mini quiches are the best way to start your morning. Bring some mini quiches along to brunch, and your friends will go crazy for them!

Ingredients
- 3 eggs
- 1 1/2 cup milk
- 1 1/2 cup gluten free Bisquick
- 1/4 cup melted butter
- 1/4 teaspoon salt
- dash of pepper
- diced peppers (optional)
- diced green onions (optional)
- bacon bits (optional)
- shredded cheese (optional)
Instructions

Preheat oven to 375 degrees F. Spray mini muffin pan with cooking spray.

In a medium-sized mixing bowl, combine eggs, milk, gluten free Bisquick, butter, salt, and pepper. Whisk until blended well.

Spoon mini quiche mix into mini muffin tin. If desired, add extra fillings into cups, and top off muffins with shredded cheese.

Bake mini quiches for 20 minutes. They should be golden brown and fluffy in the center when done.

These look absolutely delicious and super easy to make too. They are a great idea for snacking on the run or why snack on them? I would have a few for breakfast. I'm always on the look out for something to snack on as I am out and about on the road all day and don't want to buy something to eat. These are perfect.

I absolutely love quiche and I now have another great recipe to add to my arsenal. These adorable snacks could be eaten any time of day and they're so easy to make. What I like about these is that they're easy to customize! I want to make these for my next family get-together. My a aunt has a gluten intolerance and I'm a vegetarian, so this is one recipe that can fit both of our needs. LOVE IT!

I made these quiches this weekend in a regular muffin tin. The recipe makes the perfect amount to full up each of the twelve muffin cups about 3/4 of the way. They baked up in 20 minutes, but could have gone a couple minutes longer for an even crispier "crust". This recipe was a great way to use up the week's leftover vegetables!

I also made them this weekend in a regular muffin tin! I baked them for about 22 minutes and somehow had enough batter to fill 16 muffin cups (I wonder why that is). I then froze the batch so that I can have them for breakfast every day this week. To reheat them, I just popped them in the microwave. So easy!

I really don't normally like quiches of any kind. They're usually too eggy for me or have a weird texture. But these were perfect. I think I'll try making a big batch on a Sunday and freezing them so that I can have my breakfast made for the next week!

There is no way that I would have guessed this is a gluten-free recipe. They are so cute and tasty. I would serve these at my next brunch get-together. They will have everyone talking!

I could probably eat 1400 of these mini quiches. If there were a fire in my house, I would save these quiches before I saved anything else, including priceless family heirlooms and my pet fish. The only thing wrong with these quiches is that they're bite-size, so you can eat the whole batch before you even realize it, and then have to explain to your family why you "forgot to make quiche to bring to dinner." 10/10 stars!!

I don't like eggs or quiche, but I LOVED these mini quiches! It was almost like a very moist and savory muffin. I will definitely be making these again, especially since it's so easy to switch up the flavors. Next time I make them I think I will load them up with plenty of onions and bacon. Yum!

I love quiche, and this recipe looks delicious! I would include all the optional features. Question: If I wanted to make regular-sized muffins, would the baking time be altered, and if so, how? What about baking it as one larger quiche?

For regular sized muffins, we recommend baking them for about 25-30 minutes. Check on them at 20 minutes though, because you don't want to accidentally over cook them. The same rule applies to baking it as one large quiche. To test if your quiche(s) are ready, stick a toothpick into the center. If it comes out clean, they're ready to enjoy!

I loved these quiches. I don't like quiche with an ooey, eggy center, and this was not like that at all. Because they were made in a mini muffin tin, they were crusty and not eggy - just the way I like them.

These were delicious! I couldn't even tell they were gluten free. I think they'd be fun to serve at brunch as a little hors d'oeuvres since they're so tiny!
