Wake up in the morning and enjoy homemade gluten free French toast. This Perfect Gluten Free French Toast with Bacon Infused Syrup is absolutely amazing. The trick to this recipe is lightly toasting the gluten free bread before dipping it in the batter. The addition of the corn starch and baking powder helps the bread hold together while staying plump. The batter offers a light crunch while the inside remains soft but not soggy.
After making this incredible gluten free French toast, you need to make the homemade syrup. The syrup takes the French toast to a new level of deliciousness. The best news is that making your own syrup is easier than you could ever imagine. It comes together in less than five minutes and all you need is a microwave and a bowl.

Ingredients

  • TO MAKE THE FRENCH TOAST:
  • 8 slices Three Bakers Gluten Free Bread
  • 3 large eggs
  • 1/2 cup milk or dairy substitute
  • 1 1/4 teaspoon vanilla
  • 1/4 cup dark brown sugar
  • 2 tablespoons gluten free corn starch
  • 1 teaspoon gluten free baking powder
  • generous pinch of salt
  • 2 tablespoons unsalted butter
  • 1 tablespoon canola oil
  •  
  • TO MAKE THE SYRUP:
  • 2 slices bacon, cooked, crumbled, and divided
  • 1/3 cup water
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1 1/2 teaspoon vanilla
  • pinch salt

Instructions

To Make the French Toast

  1. Preheat oven to 350 degrees F. Place 8 slices of bread on a rack and cook in the oven for approximately 5 minutes.  The bread will dry out slightly but should not toast. Remove from oven and allow to cool.
     

  2. In a flat dish, combine eggs, milk, vanilla, dark brown sugar, corn starch, baking powder, and salt. Mix well, making sure there are no lumps.

  3. Heat butter and oil in a frying pan over medium-high heat.
     

  4. Dip bread slices into batter, flipping once. Carefully transfer to the frying pan. Cook 3 to 5 minutes on each side. If bread is browning quickly, turn down heat slightly.

To Make the Syrup

  1. Add 1 slice of crumbled bacon and the remaining ingredients in a large microwaveable bowl. Reserve second slice of bacon for garnish. Whisk well. 

  2. Microwave on high for 45 seconds. Stir well. Return to microwave for 60 seconds. Mixture will begin to bubble and be very hot. Stir well and set aside.  

  3. Serve French toast warm with the bacon infused syrup.
