I never thought of making egg cups in an avocado. I make egg cups all the time. I love this idea and can't wait to try it. It is also quick and easy to make as a snack. I have also tried avocado in an omelette so I can imagine this working as the flavors do marry. This website makes me hungry so I am going to go and make some of these now.

Avocado and eggs are a tasty combination. I have been known to add an avocado to an omelette. Baking the egg in the avocado is a nice idea. Either choose a big avocado or a small egg. I like it cooked so the egg isn't quite so cooked through. I don't think it needs the salsa.
