This Simply Sweet Lemon Bread is so amazingly good. It's perfectly moist, incredibly light, and the lemon flavor isn't overwhelming. Using only eight ingredients, this homemade bread recipe is one of the easiest bread recipes you'll ever make. Plus, it takes only 15 minutes to prepare, so you can make this lemon bread in no time at all.

If you really want to get creative, you can top this lemon bread with a dollop of vanilla ice cream and some fresh strawberries. Just make sure you use gluten free ice cream! With the vanilla ice cream and strawberries, this yummy dessert will transform into a delicious strawberry shortcake recipe. You definitely don't want to pass up this gluten free bread. We recommend that you share this recipe with your friends and family because this recipe is too good to keep to yourself.

Cooking Time: 1 hr 10 min

Ingredients
  • 1 1/2 cup all-purpose gluten free flour blend
  • 1 cup granulated sugar, plus 1/4 cup sugar for the glaze
  • 1 teaspoon gluten free baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • zest from 1 large lemon
  • juice from 1 large lemon
Instructions
  1. Preheat oven to 325 degrees F. Position the oven rack in center of oven. Grease a glass loaf baking pan, and set aside.
  2. In a medium mixing bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
  3. In a separate medium mixing bowl, mix eggs, milk, oil, and lemon zest. Pour the dry ingredients into the wet ingredients, and stir only until they just come together.
  4. Pour batter into the greased loaf pan. Bake for 60-70 minutes, or until a wooden toothpick inserted near the center comes out clean.
  5. Remove from oven, and let cool in the pan for 10 minutes. Then, remove the lemon bread from the pan, and let cool on a rack.
  6. In a separate small bowl, mix the remaining 1/4 cup of sugar and lemon juice. Microwave for 30 seconds, remove from microwave. Stir until sugar is dissolved.
  7. Evenly spoon the lemon sugar glaze over the top of the lemon bread. Cool completely before slicing.
  8. Store in an airtight container.
