This has a lot of really healthy ingredients. Most coconut bread ends up tasting very eggy. Since coconut flour absorbs a lot of liquid, a little goes a long way. It also means using a lot of eggs. This doesn't use as many due to the bananas. That is nice. Almond flour is a great flour to use for texture. It is not as heavy.

Banana bread is so good, I even had some earlier this week! I'll have to try this gluten free recipe soon.
