With only four ingredients, this No-Carb Cloud Bread can be made in almost no time at all. You simply mix everything together and pop it in the oven. This recipe is easy-to-follow and fun to make. This would be the perfect recipe to make with your kids or grandkids. You can help them pour everything in the mixer, and later they can form the cloud breads into circles. After this recipe comes out of the oven, you'll be amazed by the texture. It doesn't taste like traditional bread, but that won't matter. It's delicious in its own individual way. We recommend that you make this gluten free and low-carb recipe as soon as possible.

Ingredients

  • 3 eggs, separated
  • 3 tablespoons softened cream cheese
  • 1 teaspoon cream of tartar
  • 1 teaspoon sugar

Instructions

  1. Preheat oven to 300 degrees F. Line two baking sheets with foil and spray lightly with cooking spray.

  2. In the large electric mixer bowl, whip egg whites until foamy. Then while the machine is running, add the cream of tartar and sugar and raise speed to high. Whip until the whites form stiff peaks. Remove egg whites from the bowl to another bowl, but it is not necessary to wash bowl or beaters before the next step.

  3. Place egg yolks and cream cheese into the electric mixer bowl and whip until absolutely smooth. Fold the two mixtures together very gently until well blended.

  4. Spoon onto the prepared baking pans in 1/4-cup amounts, smoothing into 4-5 inch circles. Bake for 25-30 minutes or until they are golden brown. You'll need to watch carefully so they do not brown too much or burn.

  5. Remove pans from the oven and use a wide flat spatula to gently lift them to cooling racks. Cool immediately.

  6. You may eat these immediately or store for later. They will change in texture and become more bread-like and less crisp if stored overnight in resealable plastic bags.

What??? I can't believe this recipe. In a good way!! I am so going to make this. TODAY! It looks absolutely fantastic. I'm not worried about the carbs, just being gluten free and this certainly is. Talk about hassle free - I'm all in with this one. You could add nice toppings to this bread like some smoked salmon and cucumber. Yumm

Eggs, sugar and cream cheese ALL CONTAIN CARBOHYDRATES. So what's with the "no carbs" label? Alternative facts?????

About 7 carbs total, in fact. Most of it in the sugar.

I just figured out the Smart Points for you. The entire recipe is 15 points. The recipe says it makes 10 so that would come out to 1.5 points for 1 or 3 points for 2 of them.

I can not eat gluten and I am also trying to cut down on my starch intake so this is great for me. I don't miss bread a lot. I mainly use lettuce wraps for sandwiches, but once in a while bread is nice. Especially to absorb the juices for a burger and toppings.

Is it possible to cook them on a griddle like pancakes?

How can you post a recipe which includes sugar and then give it a name like "no-carb" bread? Very false advertising. I've made these rolls, but using unsoftened cream cheese so they stay a little firmer. Also, use a little Splenda if you need low-carb sweet in your rolls.

Thank you for your comment and your suggestions! We named this recipe "No-Carb Cloud Bread" because per serving it came to only 0.7 grams of total carbohydrates. Compared to a traditional bread recipe, this is hardly anything!

This tasted sweeter than I expected. It's a great, light snack for mid-day, especially if you're trying to lower your carb consumption.

I never knew you could make "bread" like this. What a neat idea.

I wouldn't choose to eat this every day, but it was fine for what it was. Would recommend this recipe to people who are serious about going carb-free.

I can't believe this recipe is carb free! You can't beat that!
