Can anyone tell me what xanthum gum is? Where would I find it? What is an alternative to it? I'm definitely going to make this white bread. I'm looking for gluten free recipes and I love this website with all these ideas. I can't wait to get started baking. Hopefully I have the time before Christmas!

Hi FoodLover! Xanthan gum is a binding agent that acts like the gluten in regular baked goods. Not all gluten free baked goods require xanthan gum. We have an article on binding agents for further help: http://www.faveglutenfreerecipes.com/Gluten-Free-Diet-Information/Guar-Gum-Xanthan-Gum-Cornstarch-Guide-Binding-Agents
