I have always preferred using box graters over the handheld variety. You have more control and I find I can grate ingredients much faster, saving me prep time. The problem with box graters is that they take up a lot of space and can be very dangerous to keep in a cabinet where someone may reach for something and scrape against it. This folding grater solves both issues; when flattened, it is incredibly small and it has a plastic storage container to eliminate any risk of injury when not in use.
