Have you ever started out looking for one thing and stumbled upon an even greater discovery? Well, that is what happened to me. While researching the possibility of using Premium Cassava Flour in gluten-free baking, I made two major discoveries. The first was that I could mimic the flavors, textures and structures of traditional baked goods, particularly cakes, cookies and pastries, using cassava flour.  Not only could I recreate these goods, but the baked goods created from the flour were superior to the gluten-free offerings currently available in the marketplace. So I decided to use my experience as a Pastry Chef to develop flavorful, enjoyable gluten-free baking mixes under the label Moon Rabbits Foods™.  With the collaboration of a former colleague and fellow Pastry Chef, Brian Thornton, (formerly of Disney, Four Seasons and Ritz Carlton hotels) we have created our signature line of premium, all natural, gluten free baking mixes.

 

I’m Mark Hetzel, a Pastry Chef with more than 25 years’ experience in restaurants, retail shops, luxury hotels and resorts and have had many opportunities to design memorable creations for dessert lovers from around the world.  A graduate of the Culinary Institute of America in Hyde Park, N.Y., I had the privilege to call the Hawaiian Islands my home for almost 15 years.   While living in Hawai’i I was able to hone my skills in the art of pastry while at the Four Seasons Resort Maui. Eventually the lure of the tropics gave way to the desire for a change of seasons.  My wife and I settled in the foothills of the Blue Ridge Mountains in North Carolina and The Moon Rabbit made himself known.

 

The Truth behind the Tale

You may be wondering about the name Moon Rabbits Foods™. I could tell you it came from the folklore of the Old Man of the Moon who discovered that the rabbit was the most virtuous of the fox and the monkey. Or, I could tell you that the name came to me at some insanely early hour one morning while I sat at my kitchen table staring back at a rabbit statue that had been illuminated by the full moon. While these stories are true, I know you won’t be interested in them. But you would be interested to know that the Moon Rabbit is sometimes said to pound the Elixir of Life, and for those with Celiac disease, gluten-free foods are indeed just that.

 

For me, Moon Rabbits Foods™ is about helping those who live with Celiac disease and gluten intolerance to have not just better options but quality foods.  The only way I know that can happen is to blend my desire to help those individuals by creating great tasting food to promote their healthier lifestyle.  As a Chef, I know all too well that preparing food without passion is like a rabbit without a tail. My products are considered some of the best on the market and I have spent long hours researching and developing a gluten free line based on quality and care.  They are so tasty they can be prepared for the entire family and enjoyed even by those who do not need a gluten-free diet.

 

I understand that people want healthy and flavorful products.  And why should they not have both? With Moon Rabbits Foods™ you will never know that you are eating gluten-free until you see the Certified Gluten Free logo displayed on our products.  We have raised the standard for gluten-free baked goods and are putting smiles on everyone’s face in the process.

 

Our current line of offerings can be enjoyed by those on a dairy free diet and the next generation of Moon Rabbit Baking Mixes are already under development, helping to meet even more dietary needs.  They will include reduced sugar and sugar-free to high fiber and vitamin enriched, high protein and vegan.
