I must admit I don't make paella very often as it is expensive. I went straight to it when I saw 'poor girl...'. I really like paella and glad I found this recipe. It is something I never thought of making as its not something which is on the menu often. I must admit (note to Ruthep) that personally I don't think you actually need the saffron. Yes, it is fragrant and goes far and all of that but to be honest if it is not in a paella dish you don't really miss it, so I would leave that out. A little turmeric does the trick. It doesn't detract from the flavor. I do like calamari and I find that it has to be cooked right. Most people over cook it. Give it another try but make sure it is not cooked for longer than 3 minutes and the flavor and texture really is different. I eat a lot of seafood in South Africa.

It is nice to find a more frugal way to make this dish. I would probably see if I could find a different seafood blend because I do not like calamari. I have never used saffron before. It is expensive, even though you don't use much at a time so it ends up lasting a long time. But, I never knew if the cost was worth it. Does anyone know if it imparts a lot of flavor or is it more for presentation?
