Celebrate spring with these Gluten Free Coconut Macaroon Nests. You can make these nests with only six pantry-staple ingredients: eggs, sugar, coconut, almond extract, vanilla, and salt. Then simply top your nest with a few Cadbury Mini Eggs.
Not only is this recipe incredibly easy to make, it's also delicious to eat. This recipe is naturally gluten free, so it's the perfect treat for all of your friends and family. We suggest making these coconut macaroon nests for a spring party or an Easter get-together. It doesn't matter their age, everyone will go crazy for these adorable gluten free treats. So we suggest you make them as soon as possible!


  • 5 egg whites
  • 6 tablespoons sugar
  • 10 ounces sweetened coconut
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla
  • pinch of salt
  • Cadbury Mini Eggs


To Make the Coconut Macaroon Nests

  1. In a saucepan, combine egg whites, sugar, and coconut flakes. Cook over medium heat until combined. Stir frequently and add vanilla and almond extract. Let cook for about 12 minutes. 

  2. Remove from heat and place scoops of the coconut mixture in a mini muffin tin to create small nests.

  3. Bake at 300 degrees for 25 minutes until browned at the top and edges. Allow to cool. Remove and top with eggs.
