You are going to be shocked at how easy this recipe is to make. With only eight ingredients and four simple steps, this is the perfect meal to make on a busy weekday evening. Ingredients

  • 1 1/2 pound boneless, skinless chicken breasts
  • 10 ounces gluten free elbow pasta
  • 1 pound reduced-fat Velveeta cheese, cubed
  • 1 can Rotel style tomatoes, undrained
  • 1 can low-sodium cream of mushroom soup
  • 1 can low-sodium cream of celery soup
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons chopped fresh parsley

Instructions

To Make the Chicken Casserole

  1. Preheat oven to 350 degrees F.  Spray a 3-quart casserole with cooking spray.
     

  2. Bring 5 quarts of water to a low boil, drop in chicken, and cook for 20 minutes. Remove chicken but raise heat to a rolling boil and add noodles.  Cook per package directions.
     

  3. While noodles cook, combine Velveeta, tomatoes, and soups in a small saucepan and heat over medium heat until cheese is completely melted, about 8 minutes.  

  4. Shred chicken and combine with noodles and soup mixture. Spoon into the prepared baking dish. Top with shredded cheese and half of the parsley. Bake for 15 minutes until all ingredients are heated and bubbling. Garnish with remaining parsley.

Notes

To make ahead, cover prepared casserole and refrigerate until ready to serve. Bring to room temperature (about 30 minutes) and bake at 350 degrees F for 20 to 25 minutes.

Yuuum, this was a delicious cheesy chicken casserole with a little bit of spice. I'd probably add some veggies for extra vitamins, but I'd definitely have it again.
