Picking up a gluten free takeaway is a problem and takeaways are also a luxury these days, so just as well we have these kinds of recipes for when we are pressed for time. This bake looks really scrumptious. I am getting into the quinoa thing and like using it in recipes.

I agree that prep time is more than 10 minutes, unless you already have your chicken shredded and veggies cut. It's DEFINITELY yummy, and a favorite at this house.

All the stuff that I love. In fact, something my whole family would love. I could eat quinoa everyday. I think it would take me longer to prep than 10 minutes. I don't keep cooked quinoa on hand and that takes 20 minutes to cook. So, if anyone else needs to cook the quinoa, keep it mind that it will take more time.
