This Quinoa Spinach Bake is wonderfully easy to make, healthy, and delicious. It only takes about ten minutes to prepare this dish, then you pop it in the oven for an hour and it's done. Sesame seeds act as a healthy replacement to bread crumbs, and shallots sauteed with garlic give the dish an extra kick of flavor. You could serve this easy quinoa recipe at any meal, in any season. I made this & halved the recipe. Added some flax seed to the sesame. We liked it but it was better the second day. Will be making it again.
