Overloaded Taco Casserole is a wonderful weeknight dinner recipe that's full of fresh and flavorful ingredients. In fact, it's actually a pretty healthy dinner recipe because of all of the vegetables that you put into it. This casserole is essentially made of all of the ingredients you'd ever want to put in a taco. However, unlike a single taco, you can actually overload a casserole with all of those ingredients. One of the best parts of this casserole is the fact that all of the layers are separated by corn tortillas and then covered completely with cheese.

I would never have guessed kale was in this. I grow kale and it grows so fast, I always have a ton and not sure what all I can do with it. It has all the great flavors of taco with some healthy stuff thrown it. Any homemade salsa would be good on top, I think, I make and can my own so that will work for me.

This looks like such a fun twist on traditional tacos. This would be great topped with guacamole.
