Ingredients

  • 2 tablespoons olive oil
  • 1/3 cup chopped green onion
  • 1 teaspoon finely minced garlic
  • 8 ounces fresh spinach, stemmed and roughly chopped
  • 3 ounces reduced-fat cream cheese, cut into cubes
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1 cup skim milk
  • 1/2 cup 2% fat evaporated milk
  • 4 egg whites
  • 2 whole eggs
  • 2/3 cup reduced fat shredded sharp cheese
  • 1/4 cup finely grated Parmesan cheese

Instructions

To Make the Quiche

  1. Preheat oven to 375 degrees F. Spray a deep-dish pie plate with cooking spray. 

  2. In a 10-inch non-stick skillet over medium heat, place the oil and saute the green onion and garlic for 1 minute. Then add spinach (you may need to do this in batches) and toss over medium heat until spinach is wilted and dry.

  3. Add cream cheese, red pepper flakes, and salt and with heat off, stir until cream cheese is melted and mixed into the spinach mixture.

  4. Using an electric mixer, combine milks, egg whites, and whole eggs. Beat for two minutes. By hand, fold in the spinach mixture then fold in the Cheddar and Parmesan cheeses. Spoon into the prepared pan.

  5. Bake 40 minutes until the center is set. Let cool for about 10 minutes before cutting into slices to serve.

I think the fact that my entire family devoured this dish in less than 20 minutes speaks for itself :) Definitely a winner in my book! Yum!

I guess I am in the minority because I am not a huge fan of crust on quiche, especially GF quiche, because sometimes it gets pretty soggy. This was crazy good though. I would have added some spice though to give it a kick.

It looked like there was a lot of spinach in the recipe, but there was not an overwhelming spinach taste, which was good. It was nice and fluffy.

This quiche was delicious! The crust is usually my favorite part, but I still loved this quiche!

Yum, so good without a crust.. though I'm generally a sucker for spinach and cheese. I'm definitely making this for my friends asap!

Though I normally love the crust, I did think that this crustless quiche was tasty. I'd definitely make it for a brunch.

Very delicious, I like to have a slice with a nice green salad. Even though it's crustless, it is delicious!
