Bruschetta Quinoa Casserole is a heavenly combination of quinoa, garlic, tomatoes, onions, cheeses, and spices. By cutting out the bread that is traditionally served with bruschetta and adding in quinoa, this meal becomes gluten free and much better for you. This casserole dish is perfect for dinner, especially on a weeknight. The recipe is so easy that with very little effort, you can create a warm, comforting, cheesy masterpiece.

I make something similar to this. I just put quinoa on the bottom of the dish and add the other ingredients as toppings and call it quinoa pizza. It is really good. I put it in the good for you category. It is a great meal to add to Meatless Mondays.
