Who exactly was General Tso?

Surprisingly, General Tso was in fact a real person. Zuo Zongtang, his real name, was a Chinese military leader from the Hunan province who famously ended the 14-year Chinese Civil War. He was highly trusted by political officials and was appointed to various high offices over the course of his life. Zuo may have lent his name to the fried chicken dish, but he most certainly never ate it, as it wasn't invented until the 1950s. There is also another military leader who can be credited with aiding the eventual creation of General Tso's chicken.

After Mao Zedong took control of China, many people, including court chefs, fled the country. One of those refugees was a Hunanese chef named Peng Chang-kuei. Chef Peng opened a successful restaurant in Taiwan where he invented the iconic chicken dish and named it after Zuo. Over time, the dish migrated west to the United States where it became Americanized with a tangy, spicy sauce.
