This easy and delicious recipe is what you'll be craving every night for dinner. Paleo Asian Chicken Stir Fry is a simple recipe that works perfectly as a weeknight dinner. Simply combine your chicken, vegetables, and spices into one skillet. Let everything cook and simmer together to produce the wonderful flavors and textures of a classic stir fry dish. This easy recipe will soon become a family favorite. Not only is it delicious, but it's also very healthy, so you don't need to feel guilty about having seconds!

Ingredients

  • 2 tablespoons olive oil
  • 2 large boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow bell pepper, cut into strips
  • 1 medium orange bell pepper, cut into strips
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon finely minced fresh ginger
  • 1 1/2 cup snow peas
  • 1 tablespoon coconut aminos
  • 1 teaspoon Sriracha sauce, more if you like it spicy
  • Sesame seeds, optional

Instructions

To Make the Stir Fry

  1. Heat the olive oil in a wok or cast iron pan until oil is shimmery.

  2. Add the chicken and saute on medium-high heat until the chicken is golden brown. This will take about 5 minutes.

  3. Add the peppers, onion, and garlic and cook for 5 minutes. Add in the ginger and cook for an additional 1 minute.

  4. Stir in the snow peas and cook for another 4 to 5 minutes until peas are bright green.

  5. Stir in the coconut aminos. Add the sriracha sauce and add more if you like it spicy.

  6. Top with sesame seeds.
