Roasted Potato Appetizer with Green Goddess Dip

"Roasted Potato Appetizer with Green Goddess Dip is full of delicious flavor and is perfect for spring and summer! This appetizer has it all!! Wonderfully crispy roasted potatoes go gorgeously with the fresh tomatoes! The noted spring flavors of asparagus and scallions also work so well here. And then the creamy delicious green goddess dip is just waiting to be dunkened into. The scallion tops are crunchy crisp and scrumptious. Your guests will be blown away!"

I love roasted little potatoes and green goddess dressing. I never would have thought to try them together. I do love the new way to make asparagus, It gets tiring eating them the same way time after time. Most times I will have to cook them separately because they are not in season at the same time here. But, I would rather eat them sparately anyway. That and skip the tomato garnish.
